Emeril's Cloud 9 Waffles With Lemon Curd and Macerated Berries

Preheat oven to 400 degrees F. and heat the waffle iron.
Into a medium bowl sift together the flour, sugar, baking powder, baking soda and salt.
In another medium bowl, whisk together the buttermilk, eggs and lemon zest.
Add the wet ingredients to the dry and mix until thoroughly combined. Whisk in the melted butter. Use batter immediately or refrigerate overnight.
Line a baking sheet with parchment paper. Pour appropriate amount of batter (about 3/4 cup) onto griddle of hot waffle iron. Cook according to manufacturer's instructions until golden brown. Transfer waffle to baking sheet. Repeat with remaining batter.
Spread 1/2 cup lemon curd over each waffle 1/4-inch from the rim. With a large spoon, dollop the meringue, in a circular pattern, until the waffle is covered leaving 1/4-inch rim. Bake the waffles in the oven for 6 minutes, until peaks of the meringue are lightly browned.
Using a spatula, transfer the waffle to a plate and serve immediately with 1/4 cup of the berries spooned on top.
Add whipped cream as an option for meringue. Use either.
