Guacamole with Roasted Garlic

IngredientsRoasted Garlic:
1 whole head garlic
1½ tablespoons extra-virgin olive oil
Guacamole:
3 medium, fully ripe avocados
1/8 cup (30 ml) freshly squeezed lime juice
1/3 cup (80 ml) chopped fresh cilantro
1 to 2 tablespoons Roasted Garlic
1 medium shallot, minced
2 small jalapeño chiles, halved, stemmed, seeded, and minced
1 teaspoon salt
