Famous Old Town Carnitas with Naga Serpent Salsa

These spicy carnitas are a party food favorite.
Ingredients
Cooking Directions
Place the lard in a medium size pot over medium heat. Once all of the lard is melted add the Pork "cushion", salt, bay leaves, garlic cloves. Cut the orange, squeeze it and add to the pot. Cook for approximately two hours or until Pork shreds easily.
On low heat add Naga Chiles, Serrano Chiles and fresh tomatillos into a sauce pan and cook for approximately 10 minutes. Add garlic cloves, onion and cook for an additional 10 minutes. Place all ingredients into a blender and blend for 2 minutes.
For the salsa:
