Linda Kay's Strawberry Cream Pie
Pie of Emeril's Eye Contest Honorable Mention

This pie is absolutely fabulous - no cooking involved. This is great in the summer or anytime there are fresh strawberries. I made this for our annual Office Services Christmas luncheon and they went crazy. One girl ate three pieces all by herself. Everyone in my family, at work or friends wants some of this pie. It is so light, refreshing and tasteful. There is the sweetness of the strawberries and whipped cream along with a little tartness with the cream cheese. And, when I make the crust with my flourless chocolate cake, people go crazy for it. You cannot eat just one slice. People practically lick the pie pan. It is a taste sensation with each bite you take. It leaves you wanting more pie
