How to make Sarah Michelle Gellar's mini broccoli cheddar bread puddings

Preheat the oven to 350°F. Line a 12-cup muffin tin with cupcake liners and coat the liners with cooking spray.
Heat the olive oil in a large skillet over medium-high heat. Add the garlic and sauté until fragrant, about 2 minutes.
Add the broccoli and scallions, season with the salt and pepper, and sauté until the scallions are translucent, about 5 minutes.
Add the milk and reduce the heat to bring the mixture to a simmer. Simmer for 10 minutes. Remove from the heat and let cool slightly.
Meanwhile, place the bread cubes in a large bowl. Pour the milk mixture over and toss. Whisk the egg in a small bowl and add it to the bread mixture, gently tossing to thoroughly mix. Add the cheese and toss again. Divide the mixture among the prepared muffin cups and bake until golden, about 25 minutes. Serve warm.
