Olivia Newton-John's Tofu Rice
A Healthy Rice Dish Kids Will Love

This was a favorite of Chloe's when she was growing up. It was not uncommon for a whole bunch of her friends to arrive at our house and this recipe is one I would throw together for a quick and easy dinner! It was a good way of getting some protein into the kids without them realizing. They called it tofu rice. Funny that!

Heat the oil in a large saucepan over medium–high heat. Add the onion and cook for about 5 minutes, or until the onion softens. Add the carrots and celery and cook for 5–7 minutes, or until softened.
Add the tofu and tomatoes to the pan and cook gently, uncovered, for about 15 minutes, or until the vegetables are tender. Season with Bragg Liquid Aminos, to taste. Serve with the steamed brown rice and steamed broccoli.
