Ingredients

  • 1 tube cinnamon rolls
  • For the burgers:
  • 1 pound of white ground chicken breast
  • 1 medium sweet onion with a hand grater
  • 2 tbsp Montreal seasoning
  • 1/2 tsp salt
  • 1/4 cup cornmeal
  • Nonstick spray for grill or Olive oil for a skillet
  • For the jalapeño sweet potato cream cheese spread:
  • 8 ounces of cream cheese
  • 1 large can of yams or sweet potatoes (28 ounces)
  • 2 jalapeños
  • 1 tsp of salt
  • Toppings:
  • spinach leaves or romaine
  • grilled or thinly sliced peaches, if available
  • red onion
  • Cooking Directions

Bake the tube of eight cinnamon rolls according to package instructions and set aside.

Cook one package center cut bacon in oven until crispy about three minutes. Remove and brush with peach jam. Set aside.

In a stand mixer, beat cream cheese until smooth and then add in two cups of canned sweet potatoes or yams (which ever is available by you) and beat again until smooth. Add in salt.

De-seed two jalapeños, dice and mix in. Set aside for assembly.

    Assembly:

Cut each cinnamon roll in half and lightly glaze the top with the icing that came in the cinnamon roll tube.

Place chicken patty followed by spinach or romaine leaves, thinly sliced peaches, peach-glazed bacon pieces, extremely thin red onions, and smear the jalapeno sweet potato cream cheese spread on top bun.
