Stephanie O'Dea's Slow Cooker 20-40 Garlic Clove Chicken
Try This Hearty Weeknight Dinner
This recipe is adapted from a traditional 40 garlic clove chicken, but I only had 33 cloves in the house. Use what you have on hand—the garlic steams beautifully along with the chicken, creating a moist, slightly nutty garlic flavor. If your cloves are on the large side, they will retain a spicy kick.
The resulting can be thickened on the stovetop with a bit of cornstarch to make a gravy, or can be used to simmer rice as a side dish.

Use a 6 quart oval slow cooker. Place onion slices on the bottom of the stoneware insert and place the chicken (or parts) on top. In a large mixing bowl, combine olive oil, salt, paprika, and pepper and then rub all over your chicken. Add the garlic cloves.
Do not add water.
Cover and cook on low for 6-8 hours, or on high for 4-6. Your chicken is fully cooked when it is no longer pink, has reached desired tenderness, and the meat pulls easily from the bone.
