Try This Holiday Side Dish
This recipe, excerpted from "Eleven Madison Park: The Cookbook" is incredible and delicious. Try this sophisticated dish tonight.
In a medium saucepan over medium heat, melt the butter. Sweat the sweet potatoes until they are tender, about 10 to 15 minutes. Season with the salt. Puree the sweet potatoes in a blender until completely smooth. Pass through a fine-mesh tamis and chill over ice.
