Tuna Tartar with Sea Urchin and Duck Crackling

Ingredients

  • For the Tuna Tartar:
  • 1lb chopped tuna sushi grade
  • 2T horseradish oil
  • 2T ginger oil
  • 2T chili oil
  • 2T white soy
  • 2T cilantro
  • 2T cooked shallot
  • Garnish:
  • 1 avocado diced
  • 5 each shisito pepper, blanched in hot oil and sliced
  • Crisp duck slices (optional)
  • Micro cilantro
  • ¼c sliced radish
  • 1 tray sea urchin
  • Spicy Oils
  • Horseradish Oil
  • 1c horseradish
  • 1c canola oil
  • Ginger oil
  • 1c ginger, chopped
  • 1c oil
  • Chili oil
  • 2T cayan
  • 4T paprika
  • 2 each chili abor.
  • 1c canola oil
  • Cooking Directions

    Mix ingredients and refrigerate and garnish as desired.

    For the Oils - Mix ingredients and simmer and strain.
