Marc Murphy's Watermelon, Mint and Feta Salad

Looking for a side dish to serve with your burgers and hot dogs? Try this refreshing twist to a salad, watermelon infused with the flavors of feta cheese and mint!


  • 1 Small to medium sized watermelon (approx. 4lbs)
  • 16 oz Feta cheese
  • 1 Small bunch of mint – picked and ripped
  • 2 Splashes of red wine vinegar
  • 4 T Extra virgin olive oil
  • Sea salt
  • Cooking Directions

    Chop watermelon into one-inch pieces and combine with the crumbled feta cheese and ripped mint. Drizzle the vinegar and olive oil, and sprinkle salt to taste. Toss and serve.
