My Better Half Pie
The Pie of Emeril's Eye Contest Finalist
This pie from Nani Bertola of Salt Lake City, Utah was a finalist in Emeril Lagasse's pie contest.
Ingredients

Layer bottom of pie crust with chopped Macadamia nuts and bake.
In medium saucepan, stir together 2/3 cup sugar, cornstarch, salt, and 3 cups half and half; blend in eggs. Cook over medium heat, stirring constantly, until mixture boils; boil and stir 1 minute.
Remove from heat; stir in butter and vanilla. Pour 1 1/2 cups cream filling into a small bowl. Stir in 1/2-cup coconut.
Pour coconut filling into baked pie crust.
Stir together cocoa, 3 tbsp. sugar ad 2 tbsp. half-and-half; blend into remaining filling in saucepan. return to heat; heat to just boiling, stirring constantly.
Remove from heat; cool slightly. Pour over coconut filling.
Cover with plastic wrap; refrigerate until cold. Just before serving, top with whipped cream and sprinkle with toasted flaked coconut and chocolate curls. Enjoy!
