Cooking Directions
Zest one orange. Then peel the orange with a knife and slice horizontally into 8 thin slices. Peel second orange with a knife and cut it into sections between membranes. Reserve for garnish.
Heat olive oil till smoking in a heavy-bottomed stainless steel pan over high heat. Season pork chops generously with salt and pepper. Add chops and sear until nicely browned on both sides and cooked through, about 5 minutes. Remove chops from pan and allow to rest on a plate.
Use orange juice to deglaze pan. Add chicken stock (or water) and soy sauce. Reduce this until it coats the back of a spoon, about 2 minutes. Remove pan from heat and swirl in the butter and orange zest to make a rich sauce.
Spread two cups of mashed potatoes in the center of a decorative platter. Place pork chops on top of mashed potatoes, and arrange orange slices around them. Top pork with orange sections and spoon sauce over the entire platter. Serve immediately.
