Sandra Lee's Mixed Berry Cobbler

Mixed Berry Cobbler

Ingredients

  • 1 1/2 cups baking mix (Bisquick)
  • 1/2 cup sugar (Domino)
  • 3/4 cup strawberry nectar
  • 1 teaspoon vanilla extract (McCormick)
  • 1/2 cup butter (1 stick)
  • 1 can strawberry pie filling (21 ounces)
  • 1 cup frozen mixed berries, thawed (Dole)
  • Vanilla ice cream
  • Cooking Directions

    Set up grill for direct cooking over medium heat. In a large bowl, combine baking mix, 3/4 cup of the sugar, the strawberry nectar and vanilla extract. Whisk until smooth. Set aside.

    Place a 10-inch cast-iron skillet on the hot grill and add butter. When butter has melted, stir in remaining 3/4 cup sugar. When sugar mixture begins to bubble, stir in pie filling and thawed berries. Pour baking mix batter over top of berries.

    Close grill and bake for 20 to 30 minutes or until golden brown and toothpick inserted into top crust comes out clean. Remove from grill. Cool for 1 hour. Serve cobbler warm with vanilla ice cream.

    Indoor Method:

    Preheat oven to 350 degrees F.

    Prepare baking mix batter as directed; set aside. Follow directions for preparing berry mixture, except use a saucepan and cook over medium-high heat until it begins to bubble. Transfer to a 2-quart baking dish.

    Pour baking mix batter over top of berry mixture. Place cobbler in oven. Bake for 35 to 40 minutes or until golden brown and a toothpick inserted into the top crust comes out clean. Remove from oven; cool for 1 hour. Serve as directed.
