Ingredients

  • 4 lemons zest from all and 8 tablespoons of juice
  • 6 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • 4 ripe avocados, sliced
  • 1 large red onion, cut crosswise into very thin slices (should be about 1 1/2 cups)
  • 1/3 cup chopped cilantro
  • Cooking Directions

    To make dressing, combine lemon juice, lemon zest and extra virgin olive oil in a bowl; season with salt and pepper and toss half of it with the red onions. On four plates, lay out a bed avocado slices and season with salt and pepper. Top avocados with red onions.

    Drizzle the remaining dressing evenly over the salads and sprinkle cilantro on top. Serve.
