Rocco DiSpirito's Avocado Salad with Red Onion
A Fresh, Dressed-Up Salad
To make dressing, combine lemon juice, lemon zest and extra virgin olive oil in a bowl; season with salt and pepper and toss half of it with the red onions. On four plates, lay out a bed avocado slices and season with salt and pepper. Top avocados with red onions.
Drizzle the remaining dressing evenly over the salads and sprinkle cilantro on top. Serve.
