Stephanie O'Dea makes slow cooking easy with recipes that are healthy, gluten free, but still delicious.

"This is the best way I've found to make Rice Krispies treats (we don't use the real stuff, but Barbara's Organic Gluten-Free Brown Rice Treats doesn't sound quite as nice). I like that the kids can be in charge of making the whole thing without me being worried they'll burn themselves on the stove..."

This recipe appears in: "Make It Fast, Cook It Slow: The Big Book of Everyday Slow Cooking."

Ingredients

  • 3 tablespoons butter
  • 4 cups mini marshmallow
  • 6 cups Rice Krispies (or similar) cereal
  • Cooking Directions

Use a 6-quart slow cooker. Put butter and marshmallow into stoneware and turn the cooker to high.

Add the cereal. Cover and cook for 1 hour. If butter and marshmallow aren't fully melted, cook for an additional 30 minutes. Remove mix. Spread content of mix onto a 11x9-inch cake pan with greased foil.

    Let cool before cutting.
