February 1, 2009 -- Question: What are carbohydrates, and are some carbohydrates better than others (such as whole grains)?

Answer: Carbohydrates are a major constituent of our diet. Those are molecules that are made up of carbon, hydrogen and oxygen. They constitute the main source of fuel for the body. And sources of carbohydrates would be for instance grains, bread, rice, pasta, fruits, vegetables, fiber. These are all sources of carbohydrate. They're essential for good health. And it is the largest, again, constituent of our diet.

But it's certainly true that there can be too much of a good thing and there can be better kinds of carbohydrate choices, especially when we're trying to maintain a healthy weight and overall good health. So we prefer the carbohydrate sources like fruits and vegetables and whole grain products as opposed to refined breads and refined pasta, for instance, refined rice.
