Create a little of the Taj Mahal Palace's culinary mystique in your own kitchen. Here's how to prepare Crab Varqui, a recipe provided by the hotel.
Serves: 4 Cooking Time: 30 Minutes
For Peppered Crab: Crab meat, 250 gm Oil, 1 tbs Garlic chopped, 1 tsp Green chile chopped, 1 Curry leaf shredded, 8 Peppercorns crushed, 10 Fennel seed powder, 1/2 tsp Onions chopped, 2 tbs Turmeric powder, a pinch Madras curry powder, 1 tsp Coconut milk powder, 2 tbsp Salt to taste Garam masala powder, a pinch
For Prawns: Prawns with tail, 4 pcs Red chile powder, 1/2 tsp Red chile paste, 1 tbsp Salt to taste Ginger garlic paste, 1 tsp Mustard oil, 1 tsp Yogurt (hung), 2 tbsp aram masala powder, a pinch Lemon, 1 Oil, 1 tbsp
For Presentation: Fresh red chiles, 12 Fresh red chile flower, 4 Coriander sprig, 4 Chives, 8 Chili oil, 1/4 cup Baked mille feuille, 15
For Crabs: Heat oil, add garlic, ginger, onions, green chiles. curry leaves and cook.
Add crabmeat, salt, fennel powder, turmeric powder, madras curry powder, coconut milk powder and garam masala powder. Add pepper powder.
For Prawns: Apply salt and lemon juice to prawns.
Marinate the prawns in a mixture of red chile powder, red chilly paste, salt, yogurt, mustard oil, garam masala powder, ginger garlic paste.
Cook the prawns with tail standing as shown in the picture.
Present Varqui crab as shown in the photograph using all the ingredients for presentation.
