Reporter: For "good morning america," abbie boudreau, abc news, los angeles. Your fridge is probably full of turkey and other leftovers. What can you do with all of that food? Our friend, emeril lagasse stopped by to talk with josh. And he has some great ideas. Emeril. Not josh. The best thanksgiving ever doesn't have to end on thanksgiving. As, well, the leftovers are ready. And so is our "gma" food correspondent, emeril lagasse here to show us. All right. What to do. So, the turkey, there's so much left. Let's give it new life. Give it new life, josh. What we're going to have is some shiitake mushrooms that we stemmed. We're going the core them. We're going to cook them until they get a nice color on them ey get tender. Okay. While that's happening, we're going to make a cheese sauce. We're going to start with some butter. Oh. And this is actually rice flour. That is for what? Texture? There's a lot of people concerned about gluten. Sure. And about wheat. We're using the rice flour that will do the trick for the sauce. We have the butter and rice flour. We've made a rue. And now, we're going to flavor it with some onion. And a little bit of garlic for me. And certainly, a little bit of thyme, as well. I know gluten-free is a cause near and dear to your heart, of course. Your daughter has -- struggles with gluten. Can you use other flours for this if you're not so challenged? If you're not so challenged, just use all-purpose flour would be great. All right. Now, what we do, once that happens and the onions cook, now what we're going to do is add milk. And to that, we're going to make what's basically a cream sauce. But then, on top of that, what we're going to do, if we step over here, which I have some made. We're going to season this, now, with a little bit of salt. And a little bit of pepper. That smells. Now, we're going to take our regular cream sauce and make it into a cheese sauce by adding some gruyere cheese to this. Now, this is for thanksgiving leftovers. I'm going to turn this off. Regular pasta, again, if you're gluten-free, you can use gluten-free pasta. I have basically some broccoli that was leftover. Love it. Those are those shiitake mushrooms. So, we're going to add them. Now, leftover turkey. What do you do with it beside a turkey sandwich? Cube it up. Add it in there. Now, what we're going to do is take the cheese sauce. Oh, look at this, baby. Oh, yes. Oh, yes. Now, what we're going to do is turn this into a casserole. So, we're going to fold this over. Okay. And just like -- just like such, we're going to fold this over. And what we're going to do is work all these ingredients in here. We're going to add this to the casserole. Top it with sliced almonds, or whatever nut that you like. And a little more grated cheese on top. You bake it for 40 minutes in the oven. This is what it looks like, right here. Okay? Gorgeous. And you have a leftover turkey pasta casserole. What else can you do with this? What we did here was we made a wonderful chicken and rice noodle soup. Carrots, celery, onions. The carcass, we made a turkey stock with, make it into a soup. My favorite is take a turkey salad, with apples, okay? Which is like a waldorf salad. And you can make a waldorf sandwich. If you don't want to do that, you can make a waldorf sandwich. We have some for you guys, coming over there right now. The day after thanksgiving. What can I say? God love him. The best thanksgiving ever.
