Emeril's Spiced Apple Cider
Warm up your holiday with Emeril's apple cider.
Dec. 25, 2008 — -- It's Christmas morning and that means presents. Chef Emeril Lagasse has got one for you: apple cider.

1 apple
2 teaspoons whole cloves
1 orange, thinly sliced
4 quarts apple cider, fresh if possible
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1/8 teaspoon fresh ground nutmeg
Cinnamon sticks for garnish, optional
Stud the apple with the cloves. Combine all of the ingredients except for the cinnamon sticks. Bring to a simmer over low heat. Simmer until the flavors come together, about 10 minutes. Remove from the heat, discard the apple. Ladle into mugs and garnish each serving with a slice of orange and a cinnamon stick.
Yield: About 1 gallon
