  • Jalapeño rolls, or any spicy roll
  • 1 pound ground beef (80-85% lean)
  • 8 ounces guacamole
  • Habanero jack or pepper jack cheese
  • 3 fresh jalapeños, sliced
  • Leaf lettuce
  • 1 tomato, thinly sliced
  • 1 red onion, thinly sliced
  • Chipotle or sriracha mayo
  • Kosher salt
  • Black pepper
  • Unsalted butter, melted
  • Cooking Directions

Separate the 1 pound ground beef into halves or quarters (1/2-pound or 1/4-pound burgers), balling them into loosely packed meatballs.

Paint the inside of the buns with melted butter.

Cook for about 2 minutes, flip, and place the habanero cheese on the burgers to melt. Place the rolls on the griddle butter side down to butter toast.

When the burger is done, place on the toasted bun, top with four slices of fresh jalapeno, 1 ounce of guacamole, 2 slices of tomatoes, sliced red onion and leaf lettuce.

Spread a generous portion of chipotle mayo on the butter toasted crown.
