The executive chef of New York City's Delicatessen stopped by GMA LIVE! to share his recipe for Cheeseburger Mac.


  • Sauce:
  • ¼ cup all purpose flour
  • ¼ cup butter
  • 1 quart whole milk
  • ½ cup American cheese
  • ¼ cup Swiss cheese
  • 1 ½ cup yellow cheddar
  • 1 cup white cheddar
  • ¾ cup smoked gouda
  • ¾ cup queso blanco
  • ¾ cup emmentaler
  • ½ bunch fresh chives (thinly minced)
  • Pasta:
  • 1 pound elbow macaroni
  • 6 quarts water
  • 2 tablespoon of salt
  • Burger:
  • 1 pound lean beef
  • 1 small onion (small diced)
  • 1 garlic clove (minced)
  • 1 tsp canola oil
  • Cooking Directions

    For the sauce: Combine flour with milk in a sauce pot and cook for 5 minutes over med heat while whisking. Add milk, bring to a simmer while whisking, and cook over low heat for 10 minutes. Slowly add cheeses while whisking. Season to taste with salt and black pepper

    For the burger: In a large sauté pan add canola oil. Sweat onions and garlic for approximately 4 minutes over medium heat until tender and translucent in color. Add ground beef. Season with ¾ tsp of kosher salt and 1/8 tsp of fresh ground pepper. Cook beef over medium heat for 5-8 minutes until beef is cooked through, continuously stirring. Once beef is fully cooked strain out all excess fat and moisture with a perforated strainer. Reserve on side until final assembly.

    For the pasta: Bring a pot of water to a boil and add salt. Put in elbow macaroni and cook until al dente, roughly 8 – 12 minutes. Drain pasta and save.

    To assemble and serve: In a large bowl, mix together the cooked pasta and cheese sauce and ground beef. Place in a baking pan and cover top with the grated fontina, gouda, emmentaler, and queso blanco. Bake at 375 until the top is browned, about 30 minutes. Finish by adding fresh chives as garnish
