Elizabeth Karmel prepares the ultimate winter comfort food recipe. Serve with cheese and tortilla chips.


  • 1 tbsp canola oil
  • 1 cup chopped onion
  • 1 teaspoon minced garlic
  • 1 ½ pounds chopped cooked chicken breasts, cut into small cubes
  • 3 (15 oz) cans Great Northern beans, drained
  • 2 tbsp chopped fresh cilantro or 2 tsp dried cilantro
  • 2 tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp cayenne pepper
  • 3 cups chicken broth
  • shredded Monterey Jack Cheese and crushed tortilla chips (optional)
  • Cooking Directions

    Heat the oil in a 5-quart cast iron Dutch oven over medium heat. Add the onion and garlic and cook, stirring occasionally until tender.

    Stir in the chicken broth, chicken, beans, cilantro, cumin, salt and cayenne and simmer 30 minutes.

    Ladle the chili into bowls and sprinkle each serving with cheese and crushed tortilla chips, if desired.
