"GMA" caught up with chef Brian Ray, the executive chef at New York City restaurant Buddakan, for lunch. In celebration of the Chinese New Year, the chef shared his recipe for pork pot stickers.

Ingredients

  • Pork Filling
  • 1 lb Pork Butt, ground medium
  • 2 Tblsp Scallions, thinly sliced
  • 2 Tblsp Jicama, small dice
  • 4 leaves Napa Cabbage, diced and blanched
  • 1 Tblsp Ginger, chopped
  • 2 Tblsp Cilantro, chopped
  • 1 Egg
  • 1/4 Cup Oyster
  • 2 Tblsp Low Sodium Soy Sauce
  • 2 tsp Sesame Oil
  • 1 Tblsp Potato starch
  • 1 tsp Sugar
  • 1 tsp Salt
  • 1/2 tsp White Pepper
  • Additional Ingredients
  • 30 wonton wrappers (avail in the frozen food section)
  • Soy sauce, for serving
  • Cooking Directions

    In a large bowl, mix all Pork Filling ingredients together create filling.

    To assemble the dumplings, place wrappers on a work surface.

    Spoon 1 tablespoon of the pork mixture into the center of each wrapper.

    Using your finger, rub the edges of the wrappers with water. Fold the dough over the filling to create a dumpling shape, pinching the edges to seal.

    Boil water and drop in dumplings.

    Dumplings are ready when they float –- usually after 5 to 6 minutes.

    Serve immediately with soy sauce, if desired.
