'Impatient Foodie' Elettra Wiedemann's kale smoothie that doesn't taste green recipe

Elettra Wiedemann is a former fashion model whose blog and new cookbook, both titled "Impatient Foodie," feature shortcuts and recipes for busy people who want delicious meals. Wiedemann's kale smoothie recipe is for anyone that wants a healthy smoothie that tastes great.

Ingredients

  • 1 scoop (about 1/3 packed cup) vanilla whey protein
  • 1 tablespoon powdered collagen
  • 1 serving powdered probiotics (usually 1/2 teaspoon)
  • 3/4 cup vegan coconut yogurt or full-fat Greek yogurt
  • 4 cups kale, tough ribs and stems removed, leaves ripped into small pieces
  • 1 cup raw coconut water or water
  • 1 tablespoon Barlean’s The Essential Woman oil (optional)
  • Small handful of ice
  • Cooking Directions

    In a powerful blender, combine the whey protein, collagen, probiotics, yogurt, kale, coconut water, Barlean’s oil (if using), and ice and blend until very smooth.

    Let the blender run for an extra 20 to 30 seconds more than you think it needs to really chop up the kale.

    If it’s too thick for your liking, add a quarter to half-cup water and blend again to combine. Enjoy immediately.
