Servings:6-8
Difficulty: Easy
Cook Time: min

This pie is absolutely fabulous - no cooking involved. This is great in the summer or anytime there are fresh strawberries. I made this for our annual Office Services Christmas luncheon and they went crazy. One girl ate three pieces all by herself. Everyone in my family, at work or friends wants some of this pie. It is so light, refreshing and tasteful. There is the sweetness of the strawberries and whipped cream along with a little tartness with the cream cheese. And, when I make the crust with my flourless chocolate cake, people go crazy for it. You cannot eat just one slice. People practically lick the pie pan. It is a taste sensation with each bite you take. It leaves you wanting more pie

Ingredients

  • 1-2 pints of fresh strawberries: hulled, rinsed, sliced and dry
  • Oreo cookie pie crust or graham cracker pie crust
  • 2 Cups of heaving whipping cream
  • 1/2 Cup of powdered sugar
  • 1 Teaspoon of vanilla
  • 8 oz. Philadelphia cream cheese at room temperature 1/2-1 Cups of sugar
  • Cooking Directions

Place mixing bowl and balloon whisk in freezer 10 min. Combine cream, powdered sugar and vanilla in chilled bowl w/balloon whisk. Whisk on medium until stiff peaks form, about 3 min. Do not over whisk. Add the cream cheese and sugar and mix thoroughly. Place the sliced strawberries in the pie crust and fill the pie shell with the whipped cream mixture and garnish with a fresh whole strawberry. This pie is absolutely fabulous - no cooking involved.
