Marcus Samuelsson's Ambessa Mint Iced Tea

Combine the water, sugar, honey, mint sprigs, and ginger in a large saucepan and bring to a boil, then reduce the heat and simmer for 5 minutes. Add the green tea and simmer for another 3 minutes. Strain and let cool.
Serve the tea over ice cubes, garnished with the lemon.
