Diane Henderiks' Pomegranate-Lime Vinaigrette

Whisk first 7 ingredients (vinegar through cayenne) for dressing in a bowl. Let sit for 5-10 minutes to meld flavors.
Whisk in oil and season to taste with salt and pepper. Set aside.
Combine ingredients for salad in a large bowl.
Add half of the dressing and toss thoroughly.
Add additional dressing as needed or serve a little extra on the side.
