Easy Weekend Brunch Recipes

Still tired from the start of daylight-saving time last week? Sleep in this weekend and enjoy a casual brunch. Try Emeril's light minted fruit salad or cheesy herbed eggs for a quick family brunch that won't take hours to make.

These recipes are a perfect way to welcome the extra hour of sunshine. And if your weekend is jam-packed with activities, you'll find a lot of these recipes are portable, for a nutritious on-the-go breakfast.

Cheesy eggs accented with chives and tarragon make for a sophisticated weekend brunch. Use a mild soft cheese, like cream cheese or goat cheese, to give the eggs a rich, creamy texture.

Homemade black bean hummus gives your everyday bagel a pick-me-up. Add some heat to the bagel with spices like cayenne pepper and cumin.

A bagel, egg, cheese and bacon make this an easy brunch item or portable breakfast option. For brunch, serve the sandwiches on a platter or wrap them individually in foil to for on-the-go eating.

This refreshing salad is made with orange and grapefruit segments and then drizzled with syrup made by heating sparkling cider, vanilla and sugar. Lemon zest and juice are added to give a tart flavor to the syrup.

Eating your greens has never been easier with this hearty breakfast. Bacon gives the kale a flavor your kids will even love to eat.

These crispy hash browns are the perfect accompaniment to a classic egg and bacon breakfast. To get evenly browned potatoes, make sure to shake the pan frequently to keep them from burning.

These small quiches are made in muffin tins, allowing 12 to bake at a time. Brushing the sides of the tin with melted butter makes them easy to remove after baking.
