Wake Up With These Healthy Muffins

Ingredients

Heat oven to 350°F. Spray 12 regular-size muffin cups with cooking spray. Set aside.
Puree avocado and 1/2 cup milk together in blender and pour into medium mixing bowl. Add next 5 wet ingredients to avocado mixture and whisk well. Stir in carrots. Set aside.
Mix dry ingredients together in a large bowl, set aside. Make a well in dry ingredients and add wet ingredients, stir until dry ingredients are just moistened.
Fill muffin cups evenly bake about 25 minutes or until toothpick inserted in the center comes out clean. Enjoy!
