Onaga with Tamarind Curry and Braised Green Papaya

Ingredients

  • Ingredient for rice flakes-crusted onaga
  • ?? cup Cumin oil
  • As needed Indian rice flakes
  • 1 filet Onaga, skin off (1 pound cut into pieces)
  • As needed Sea salt
  • As needed Fresh ground white pepper
  • As needed Clarified butter
  • Ingredients for tamarind curry
  • 1 Tbsp Tamarind
  • 1 Tbsp Grated ginger
  • 1 Tbsp Chopped garlic
  • 1 each Diced onion
  • 1 tsp Tumeric
  • ?? tsp Fenugreek
  • 1 tsp Coriander seeds
  • 1 tsp Fennel seeds
  • 2 Tbsp Lime juice
  • 2 cups Nage
  • ?? cups Coconut milk
  • As needed Sea salt
  • As needed Fresh ground white pepper
  • Ingredients for braised green papaya & sea asparagus tempura
  • 1 each Small green papaya, cut in to match sticks and
  • braised in nage
  • 8 bunches sea asparagus
  • 2 cups Tempura batter
  • 2 cups Rice oil
  • 1 Tbsp Onion seeds
  • 1 Tbsp Mustard oil
  • As needed Sea salt
  • As needed Fresh ground white pepper
  • Cooking Directions

    Method for rice flakes-crusted onaga

    Season the fish with salt.

    Brush the onaga with cumin oil.

    Crust one side with rice flakes

    Saute crust side down with clarified butter.

    Method for tamarind curry:

    Saut?? the onion, garlic, ginger in oil.

    Add the spices and cook.

    Add tamarind and cover with nage and coconut milk.

    Simmer for 20 minutes.

    Place in a blender on high speed.

    Strain through a fine sieve.

    Season with salt & pepper and lime juice

    Method for braised green papaya & sea asparagus:

    Saut?? the green papaya in mustard oil, add onion seed, season.

    Fry the sea asparagus tempura in rice oil.

    Plating:

    Curry on the bottom of the plate, Fish on top, papaya & sea asparagus tempura on the side.
