Mushroom Chimichurri

Ditch the calories and still enjoy the sauce

In just a few simple steps you can have delicious sauces and marinades to spice up your grilled chicken, fish or meat without the guilt.


  • 1/2 cup of white vinegar
  • 1/2 each Serrano pepper
  • 1 tsp oregano
  • ½ tsp black pepper
  • 1 bay leaf
  • 1/2 cup chimichurri base
  • ¼ cup roasted shitake mushrooms (small dice)
  • ¼ cup roasted chanterelles (small dice)
  • ¼ cups maitake mushrooms (small dice)
  • ¼ cup olive oil
  • 2 tbs chopped parsley
  • 1 tsp fresh chopped thyme
  • 2 tbs fresh chopped chives
  • Salt to taste
  • Cooking Directions

    Clean the mushrooms really well, and roasted them with salt, pepper and oil, cool down and small dice for the chimichurri

    Place all in the blender and blend really well

    Mix in the olive oil and herbs first the add the rest of the ingredients and taste for salt
