Grilled Tomatoes With Fresh Herbs And Extra Virgin Olive Oil

A Perfect Meal for Summer

This summer favorite tastes great, is good for you and is perfect for summer.

  • 24 tomatoes, cut in half lengthwise (Emeril used romanita tomatoes)
  • 1/4 cup plus 2 tablespoons extra virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 1/2 tablespoons fresh herbs (such as chives, basil, oregano and marjoram), finely chopped
  • Cooking Directions

    Preheat a grill to medium.

    Toss the tomatoes with 3 tablespoons of the olive oil and season lightly with salt and pepper. Place the tomatoes on the grill in a grill basket and cook for 2 to 4 minutes on each side. Transfer to a platter to cool slightly.

    Drizzle with the remaining extra virgin olive oil and garnish with the chopped herbs. Sprinkle with additional salt and pepper to taste and serve, either warm or at room temperature.
