'Nightline's' Cynthia McFadden's Simple Broccoli Recipe

During our latest episode of "Primetime Nightline," anchor Cynthia McFadden talked with people who struggle with food, including an overweight teenager from Texas named Nick Preto.

Once a 403-pound 16-year-old who used to eat 7,000-calorie meals in a single sitting, Nick underwent gastric bypass surgery and is on his way to living a healthier lifestyle.

Cynthia shared one of her favorite healthy and simple recipes with Nick and his mom. Now you can make that recipe yourself at home.

Ingredients:

Fresh broccoli

Water

1/4 teaspoon Lemon Juice

1 teaspoon Olive Oil

Preparing the Broccoli Recipe:

Cut off the tough stems of the broccoli and break apart the florets. Make enough to fill a small bowl. Add an inch of water. Zap in the microwave for about four minutes, leaving the broccoli a little bit crispy. Add lemon juice and olive oil. Mix together and enjoy. It's delicious!
