Paula's Busy Day Chicken

Serves 4

This dish tastes as if you'd been cooking all day, but it couldn't be easier: Just put all the ingredients in one pot, cover it and walk away till it's done. You can cook this on top of the stove or in a crockpot (see below). Make it with your favorite parts of the bird and serve it with rice or egg noodles and some steamed green beans. You've got a dinner that will please everyone.

3 pounds chicken parts, bone-in, skin removed, and rinsed
1 2-ounce envelope onion soup mix
2 tablespoons dark brown sugar
1 15-ounce can plain tomato sauce

In a large skillet or saucepan place the chicken parts and sprinkle evenly with the onion soup mix and brown sugar. Pour the tomato sauce over all. Turn the heat to medium high and cook until the mixture just starts to bubble around the edges, then turn down the heat to medium low and cover. Cook for 35-40 minutes, or until the chicken is done.

Note: To make this in a slow cooker, cook on low for 4 hours or high for 2 hours. If you're feeding a crowd, use one can of tomato sauce and 2 tablespoons of brown sugar for every three pounds of chicken. Do not increase the amount of onion soup mix. The cooking time should be about the same.
