Chef Dan Churchill Shares His Leftover Thanksgiving Recipes
Reinvent that leftover turkey, stuffing and cranberries in an all-new dish.
— -- It’s the day after Thanksgiving and to help freshen up your leftover turkey and trimmings, Australian chef Dan Churchill shares his best recipes using leftovers.
Churchill, author of "The Healthy Cook," has created three dishes to reinvigorate the food you didn't finish on Turkey Day.
Thanksgiving Hash
First up is his recipe for Thanksgiving hash. You can create a crispy and delicious one-pan dish with leftover stuffing for the ultimate morning-after meal.
RECIPE
2 tbsp. olive oilLeftover tasty stuffing4 eggs1/2 cup cheddar cheese1. Add oil to a medium high heat skillet or cast iron pan and fold in your stuffing allowing it to sit and get crispy edges for 3 to 4 minutes.2. Create four holes in the stuffing mix and crack an egg into each. Sprinkle over cheese and put under a broiler. If you don’t have one, simply preheat your oven to 420 degress F. Cook until eggs are cooked and cheese is melted.Cranberry Crumble
The next dish upgrade is a sweet cranberry crumble. Cook up those leftover cranberries to make a sweet topping for cereal or granola.
RECIPE
1. Pour cranberry sauce into a skillet on medium-high heat and reduce until it's a nice syrup-like texture.
2. Take off the heat and spread over cereal/granola and scoop on the yogurt or ice cream.
3. Finish with a drizzle of honey.
Turkey Bake
Finally Churchill's turkey bake recipe re-purposes the star of the show. Use up leftover veggies, potatoes and turkey to bake up a brand new version of your Turkey Day feast.
RECIPE
Turkey LeftoversRoasted vegetable leftovers; for example, potatoes or Brussels sprouts2 cups ricotta2 eggs 1. Preheat oven to 400 degrees F.2. In a mixing bowl, combine ricotta and eggs, and place leftover turkey and vegetables into a baking tray.3. Pour ricotta mix over the top of the leftovers making sure to get in between every ingredient, then bake in the oven for 20 to 25 minutes or until golden.
