Easy Passover recipes for homemade matzah and more

Get ready for Passover with a delicious spread of Jewish favorites to nosh on during the seven-day holiday of the feast of unleavened bread.
New York City based cook and recipe developer Jason Goldstein shared a handful of recipes with "Good Morning America" to mark the occasion.
Homemade Matzah Recipe
Ingredients
1 ½ cups of flour
1 teaspoon of salt
4 tablespoons of extra virgin olive oil1/2 cup of water
1 egg
Instructions
Preheat the oven to 450 Degrees.
In a bowl, add the flour and salt. Mix to combine.
Make a well in the center of the flour mixture and pour in the oil and water. Slowly mix with your hands to incorporate until combined.
Add a teaspoon of oil to the countertop and knead the dough 3-4 times until smooth.
Use a rolling pin to roll out the dough very thin. Make sure to flour the rolling pin as needed, ensuring it doesn’t stick or rip the dough.
Use a pizza cutter to cut the rolled-out dough into a large square - then cut it into four smaller squares.
Place each square on a baking tray lined with parchment paper. Poke some holes in each square to create the signature Matzah look, also preventing the dough from rising. Brush the squares with egg wash to achieve a crispy exterior and shine.
Place on the top rack of the oven and bake on each side for four minutes.
How to make homemade everything bagel seasoning
Ingredients
1 tablespoon of sesame seeds
1 tablespoon of poppy seeds
1 tablespoon of garlic powder
1 tablespoon of dried onion flakes
1 tablespoon of salt
1 tablespoon of dried garlic
Instructions
Mix the ingredients together in a mixing bowl. Store in a sealed container for up to 6 months.
Matzah Brei Recipe
Ingredients
5 eggs, whisked
1 teaspoon of salt
1 teaspoon of pepper
2 teaspoons of everything bagel seasoning
4 sheets of Matzah, crumbled
2 tablespoons of butter
1 tablespoon of sour cream
1 handful of dill, chopped
3 scallions, chopped
Instructions
In a medium saucepan over high heat melt the butter and add the crumbled matzah. Fry for one minute.
Turn the heat to low and add the eggs and scramble until the eggs form curds.
Take eggs off the heat and add salt, pepper, sour cream, scallion, and dill.
Sprinkle everything bagel seasoning on top and enjoy!
Sweet Matzah Brei
Ingredients
5 eggs, whisked
1 teaspoon of salt
4 sheets of Matzah, crumbled
2 tablespoons of butter
1 tablespoon greek yogurt
2 to 3 teaspoons cinnamon sugar to taste
2 tablespoon of whipped cream
Instructions
In a medium saucepan over high heat, melt the butter and add the crumbled matzah. Fry for one minute.
Turn the heat to low and add the eggs and scramble until the eggs form curds.
Take eggs off the heat and add salt, cinnamon sugar, and greek yogurt.
Dollop whipped cream and sprinkle cinnamon sugar over the top and enjoy!
Matzah and Lox with Scallion Cream Cheese
Ingredients
2 sheets of everything bagel matzah
1 package of scallion cream cheese
1/2 pound of Lox
1/4 cup of dill
Instructions
Smear scallion cream cheese on each sheet of Matzah.
Top with ribbons of lox and dill.
Serve with a lemon wedge and enjoy!
