Rachael Ray's Buffalo Chicken Filled Tortilla Cups

April 30, 2007 — -- Rachael Ray has been a busy woman lately. She personally created and help cook up a special prom-night menu for students at Enterprise High School in Alabama, which had been hit hard by recent tornadoes.

Below is the recipe for Ray's Buffalo Chicken Filled Tortilla Cups, which she made for the prom.

Place a small sauce pot over medium heat, add hot sauce. When you start to see steam, add in the butter one tablespoon at a time and whisk until the butter is melted. The sauce will start to turn an orange-ish color. Add the pulled chicken to the hot sauce, season with salt and pepper and mix. Set to low heat and set aside.

In a small bowl, mix together the sour cream and blue cheese and season with salt and pepper.

To assemble, place a spoonful of the buffalo chicken mixture in a tortilla cup and put a little dollop of the blue cheese sour cream on top. Sprinkle with chives or cilantro and serve.

Makes about 24 to 30 bite-size pieces.
