March 9, 2009 -- Question: What do I need to know about starches (carbohydrates) and their effects on my weight and health?

Answer: Starches or carbohydrates provide the bulk of our energy in our diet. They provide certain vitamins, especially B-vitamins and fiber.

Now carbohydrates, for a while we used to eat a high-carb, low-fat diet. Then lately it switched to a low-carbohydrate, high-fat diet.

The truth of the matter, like many things in life, is moderation. And instead of going to one extreme or the other, try and eat a moderate amount of carbohydrates or starch in the diet, but go for quality over quantity. Instead of sugar or refined white flour, go for whole grains such as whole wheat bread, whole grain pasta, brown rice, oatmeal, barley and other sources of whole grain.
