RECIPE: Chicken Mac 'N Cheese

American University student Wael Davis offers a spin on classic comfort food.

Feb. 11, 2009 -- This recipe is a fun twist on a college favorite. It's safe to save that every college student has made mac and cheese while studying, and this recipe is a quick and easy way to add vegetables and chicken. Cooking time is about 20 minutes, which is manageable in a student's busy schedule.

Be extra careful when dealing with raw chicken. Wash hands before and after, and make sure the chicken is almost fully cooked before adding the broccoli. Wash any utensils that come in contact with the chicken, as well as the counter top used.

Using lighter oil is a better choice because it simply coats the pan and doesn't add a different taste to the recipe, as a darker olive oil could.

Bring water to a boil and add a touch of salt and oil. Prepare pasta, following directions on box.

Cut the raw chicken cutlets into small pieces, about the size of the broccoli.

Heat up oil in a pan, preferably light oil such as canola. Add about a half clove of minced garlic.

Add the chicken, and cook for a few minutes.

While chicken is still slightly pink inside, add the frozen broccoli and continue cooking.

Once the chicken is fully cooked, add the broccoli and chicken mix to the pasta.
