'Eat and Greet': Roasted Pork

On this week's "Eat and Greet," ABCNews' Katrina Szish went inside the kitchen of the hot Times Square District Cuban restaurant Havana Central to bring you executive chef Stanley Licairac's recipe for roasted pork.

Ingredients

10 pounds pork shoulder
½ cup garlic, whole cloves, peeled
¾ tsp garlic, granulated (garlic powder)
1½ tsp garlic, minced
¼ cup olives -- Manzanilla
½ cup diced pimento
1½ tsp oregano
½ tsp black pepper
2½ tsp salt
½ cup white vinegar
1/3 cup fresh lime juice
1/3 cup onions, thinly sliced
1 cup olive oil

Preparation

Yield: 8-10 portions
