Answer: There are a number of good options that are both low cost and healthy for lunch. A good way to start is with some whole grain, high-fiber bread. And make it something you enjoy. Then the plain old peanut-butter sandwich, adding peanut butter to whole grains maybe with a little bit of jelly, perhaps preferably low-sugar jelly or jam, that makes a really good combination. Add an apple, you've got a great lunch.
Or, another variation is use some canned salmon, really good for us, high in omega-3 fatty acids, have that on a whole grain couple slices of bread, maybe add some tomato or lettuce, and you've got a very low cost but very healthy lunch.
