Chef's Table Recipe: Brother Jimmy's Pecan Pie

Feb. 26, 2009 — -- Process: Pre-heat oven to 375.

Roast pecans till slightly brown in a sauté pan or in the oven and set aside.

Poke holes in bottom of pie shell with fork and bake until slightly browned, about 10 minutes, and set aside.

In mixing bowl, beat melted butter, sugar and eggs until slightly fluffy, then blend in syrups, vanilla and salt.

Distribute the pecans evenly onto bottom of the pie shells and pour liquid mixture into pie crust. The pecans will rise to the top.

Bake for 45-55 minutes, until browned. Remove from oven and cool completely before serving.

Makes 8-10 slices.
