Help For Dieting Cheese Lovers

But Sara Moulton says this herbed yogurt cheese from "Sara Moulton Cooks at Home" is a great option for cheese lovers because it's low in fat and high in flavor. Using low-fat yogurt cuts down on calories and the chives give the cheese a great taste, so you don't feel like you're missing out.
Ingredients
2 cups low-fat yogurt
1 tablespoon snipped fresh chives
1 teaspoon chopped fresh tarragon leaves
1 teaspoon finely chopped fresh thyme, preferably lemon thyme
1 small shallot, minced
1 garlic clove, minced
1 tablespoon extra virgin olive oil
Kosher salt and freshly ground black pepper to taste
Directions
Line a large strainer with a double layer of rinsed and squeezed cheesecloth or a layer of rinsed and squeezed paper towels. Spoon the yogurt into the strainer and set over a bowl to drain. Cover with plastic wrap, put in the refrigerator, and drain for at least four hours, preferably overnight.
Remove the yogurt cheese from the cheesecloth and place in a small bowl.
Stir in the remaining ingredients.
Spoon into a decorative crock and refrigerate for up to three days.
