Ed McFarland’s Mac N Cheese

Ingredients:

  • 1 lb. mac & cheese sauce
  • 1 lb. orecchiette dececco
  • 2 teaspoons breadcrumbs
  • Pinch of chopped parsley
  • 3 cups heavy cream
  • 3.5 cups Velveeta
  • Directions:

    Cook pasta for 10 minutes in salted boiling water.

    Meanwhile make the cheese sauce. Cut the Velveeta into squares and bring cream to a boil. Simmer and whisk in cheese. Add salt to taste if desired.

    Toss pasta with cheese sauce in sauté pan. Place in bowl. Sprinkle breadcrumbs and parsley.

    Garlic Parmesan Wings

    Ingredients:

  • Approx. ½ cup vegetable oil (enough to submerge wings in a small sauce pot)
  • 1 cup flour
  • ⅓ cup cornmeal
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 party wings
  • 1 tablespoon garlic (chopped)
  • 1 teaspoon olive oil
  • 1 teaspoon parsley (chopped)
  • ⅛ c. Grana Padano cheese
  • Directions:

    Add vegetable oil to a small sauce pot halfway full so that all of the wings can be completely submerged.

    Fry for 15 minutes at approximately 350 degrees.

    Drain and let the wings cool off slightly.

    Mix flour, cornmeal, salt and pepper together to create flour mixture.

    Lightly toss wings in flour mixture.

    Fry for another 12 minutes to ensure that the wings are cooked properly, pull away from the bone, and are crispy.

    Put garlic and oil in a bowl and toss until it’s coated very well.

    Place half of cheese in the bowl.

    Toss wings in bowl.

    Place wings on plate and sprinkle with remaining cheese and parsley.
