How to make gingerbread cookies with citrus icing inspired by 'The Holiday'
TV host and cookbook author Eden Grinshpan shares her holiday cookies.
For day seven of "Good Morning America's" 12 Days of Christmas Cookies, TV host and cookbook author Eden Grinshpan joined to make a holiday classic -- gingerbread.
Grinshpan said she was inspired by the movie "The Holiday," giving a nod to the the U.K. scenes with gingerbread and California with a citrus icing.

Gingerbread Cookies
Ingredients
1/2 cup (1stick) unsalted butter room temp
1/2 cup unsulphured molasses
1/2 cup dark brown sugar
1 egg
1 teaspoon vanilla extract
2 1/2 cups all purpose flour
1 teaspoon cinnamon
1/2 teaspoon ground clove
1/4 teaspoon ground cardamom
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
Directions
In a standing mixer with a paddle attachment add the butter, brown sugar and molasses. Whip on high for 3 minutes. Add in the egg and the vanilla extract and continue to whip until creamy and light in color, another 3 minutes.
In another bowl mix all the dry ingredients. Turn the machine down and add in half the amount of the flour mixture. Mix until almost combined and then add in the rest. Continue to mix until fully incorporated. Wrap in plastic wrap and flatten into a disc. let chill in fridge for at least 1 hour.
Preheat the oven to 350 degrees. Line two sheet trays with parchment paper.
Remove the dough and roll out to 1/4 inch thick. Using cookie cutters cut out your shapes and place them on the tray. Place in the oven for around 8 minutes. Remove and let cool completely before frosting.
Citrus frosting ingredients
2 cups powdered sugar- sifted
1 tablespoon milk
1 tablespoon orange juice
Half orange zested
Half lemon zested
1/4 teaspoon vanilla
Sparkle sprinkles to decorate with
Directions
Mix together until all the lumps are gone and it is very smooth. Pipe decorations onto cookies using either a piping bag or you can also use a Ziploc. Finish with sprinkles of your choice. I love the sparkle sprinkles for this one.
