Uncle Aurelio's Beans in a Pot

May 5, 2006 — -- Looking for an authentic dish for Cinco de Mayo? Try ABC's "Extreme Makeover: Home Edition" landscape designer Eduardo Xol's recipe for Frijoles Charros de Tio Aurelio, which translates to Uncle Aurelio's Beans in a Pot.

Yield: Makes 12-15 servings

Ingredients:

10 cups of water

2 lbs. Pinto Beans

8 red chiles (Can be Guajillo, California or New Mexico -- fresh is always best, but dried can be used as well)

2 chopped onions

2 chopped tomatoes

12 chopped green tomatoes (Tomatillos)

½ lb. chopped ham

½ lb. uncooked bacon

½ lb. uncooked chorizo

1 tsp. dry oregano

3 tsp. chopped cilantro

One bag of chicharones (dried pork rinds. Optional)

Salt and pepper to taste.

Directions:

Clean, rinse and strain beans thoroughly. Place the water to boil in a large pot. Add all ingredients into the pot slowly. Bring to a boil then lower the heat to medium. Cover the pot leaving a slight opening to release the steam.Cook for two hours. Add salt and pepper to taste. Cook for an additional hour.
