Fresh Corn Fritters with Homemade Maple Syrup

1 cup all purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

2 tablespoons sugar

1 egg

1/3 cup milk

1 tablespoon oil

1-2/3 cups fresh-cut sweet corn

Oil for frying

Sift flour, measure next 3 ingredients. Beat egg, add milk and oil, then flour mixture and beat with spoon until smooth. Fold in corn. Let stand 5-10 minutes while heating oil. Fry at 360 deg F (or med high heat on stove). Great with fresh maple syrup.

Amish Apple Dumplings

Pastry:

2 ¼ cups flour

¾ teas. salt

¾ cup shortening

5 Tbsp. cold water

Apples:

6 medium tart apples

½ cup sugar

1 ½ tsp. cinnamon

2 Tbsp. butter

Sauce:

2 cups whole milk

2 egg yokes

1/3 cup of sugar

2 Tbsp. corn starch

1/8 tsp. salt

2 tsp. vanilla

Prepare pastry as for pie crust. Cut into squares.

Peel and core apples. Place whole apple in center of each square. Combine ½ cup sugar and 1 ½ tsp. cinnamon and fill cavity of each apple with this mixture. Dot with butter.

With water, moisten 4 points of each pastry square and brig opposite points up over apple, overlapping them. Seal well. Arrange about 2 inches apart in 9' x 13' baking pan.

Stir the egg yokes and ¼ cup of milk with a whisk. Mix this strained egg mixture into the remaining milk in a sauce pan. Add the sugar, cornstarch and salt. Cook, whisking constantly, over medium heat until it comes to a simmer. Whisk in the butter and vanilla just until the butter is completely incorporated. Cool in a refrigerator until it's chilled.

Blend equal amounts of pudding and Cool Whip. Pour over the apple dumpling, and serve.
