While the basic cheese and bread sandwich is always a winner, take a look at some of Rachael Ray's favorite combinations for something a little more exciting.

The BBQ Special

To make this sandwich, use pork or beef, sliced scallions, chopped fresh chiles and American cheese.

The Smooth and Crunchy

This take on the grilled cheese is made with pear slices and brie instead of American cheese. After you cook it, dip the sides in chopped nuts.

The Apricot Pub-Wich

For this one, use a rustic sourdough with sharp cheddar and apricot jam.

Katie's Fondue Party

To create this one, use garlic-rubbed pumpernickel bread and, instead of American cheese, use a combination of Swiss and Bruyere cheeses. Finally, add some plum tomatoes.

Naughty Trucker

This grilled cheese includes ranch dressing, grated cheddar, roasted turkey and caramelized onions.

Zesty Italian

To make this one use presto mayo on a baguette, buffalo mozzarella, basil, roasted red peppers and sundried tomatoes.
