Velveeta Macaroni and Cheese, Dip Recipes

Nov. 6, 2003 -- Velveeta, the family-friendly cheese that comes in a familiar yellow box, can be used for a surprising variety of recipes from macaroni and cheese, to salsa dip.

Here are the recipes that were prepared on Good Morning America, and some other Velveeta favorites, in celebration of Velveeta's 75th anniversary.

Velveeta Ultimate Macaroni & Cheese

(Prep: 5 minutes; Cook: 15 minutes )

• 2 cups (8 oz.) elbow macaroni, uncooked • 3/4 lb. (12 oz.) Velveeta cheese product, cut up • 1/3 cup milk • 1/8 tsp. pepper

1.Cook macaroni as directed on package; drain well. Return to pan. 2. Add remaining ingredients; mix well. Cook on low heat until prepared cheese product is melted, stirring frequently.

Makes 4 (1-cup) servings.

To save 70 calories and 10 grams of fat per serving, prepare with Velveeta Light reduced fat cheese product.

Velveeta Ultimate Grilled Cheese

(Prep: 5 minutes; Cook: 5 minutes )

• 8 slices white bread • 6 oz. Velveeta Pasteurized Prepared Cheese Product, sliced • 8 tsp. soft margarine

1. Top one of the bread slices with prepared cheese product and second bread slice.

2. Spread outside of sandwich evenly with margarine. 3. Cook in skillet on medium heat until lightly browned on both sides.

Makes 4 servings.

Alternative: Prepare as directed, using Velveeta reduced fat Pasteurized Prepared Cheese Product as a substitute.

Velveeta Salsa Dip

(Prep: 5 minutes; Microwave, 5 minutes)

• 1 lb. (16 oz.) Velveeta Pasteurized Prepared Cheese Product, cut up • 1 cup Taco Bell Home Originals Thick 'N Chunky Salsa • Wheat Thins Snack Crackers

1. Microwave Velveeta and salsa in 1-1/2-quart microwavable bowl on high, 5 minutes or until Velveeta is melted, stirring after 3 minutes. 2. Serve hot with crackers.

Makes 24 (2-Tbsp.) servings.

Kraft Kitchens Tip: To make Velveeta Cheesy Chili Salsa Dip, assemble dip as directed, stirring in 1 can (15 oz.) chili. Microwave as directed. Makes 36 (2-Tbsp.) servings.

Velveeta Southwestern Chicken Dip

(Prep: 10 minutes; Microwave: 7 minutes)

• 1 lb. (16 oz.) Velveeta Pasteurized Prepared Cheese Product, cut up•1 can (10 oz.) Ro*tel Diced Tomatoes and Green Chilies, drained •1 pkg. (6 oz.) Louis Rich Southwestern Seasoned or Grilled Chicken Breast Strips, chopped • 1/4 cup chopped green onion • 1 tsp. ground cumin (optional)

1. Microwave all ingredients in microwaveable bowl on high 6 to 7 minutes or until Velveeta is melted, stirring every 3 minutes.

2. Serve with tortilla chips or cut-up vegetables.

Makes 28 (2-Tbsp.) servings.

Great Substitute: Substitute 1/2 lb. cooked and drained ground beef for the chicken breast strips.

Special Extra: Prepare as directed, using Velveeta Mexican Pasteurized Prepared Cheese Product with Jalapeño Peppers.

Velveeta Easy Cheesy Fajita Dip

(Prep: 10 minutes; Microwave: 8 minutes)

• 1 lb. (16 oz.) Velveeta pasteurized prepared cheese product, cut up • 1 pkg. (6 oz.) Louis Rich Oven Roasted Chicken Breast Cuts • 1/4 cup each chopped green and red pepper • 1 small onion, chopped• 1/2 cup Breakstone's or Knudsen Sour Cream

1. Microwave all ingredients except sour cream in microwavable bowl on high 6 to 8 minutes or until Velveeta is melted, stirring every 3 minutes.

2. Stir in sour cream. Serve with tortilla chips or cut-up vegetables.

Makes 24 (2-Tbsp.) servings.

Great Variations: Substitute 2 cups chopped cooked fresh chicken for the chicken breast cuts. or Substitute 1/2 lb. drained browned ground beef for the chicken breast cuts.

Special Extra: Prepare as directed, using Velveeta Mexican Pasteurized Prepared Cheese Product with Jalapeño Peppers.

Velveeta Taco Mac & Cheese

(Prep: 5 minutes; Cook: 15 minutes )

• 1 lb. ground beef • 1/3 cup Taco Bell Home Originals Thick 'N Chunky Salsa • 2 cups (8 oz.) elbow macaroni, uncooked • 1/2 lb. (8 oz.) Velveeta Pasteurized Prepared Cheese Product, cut up

1. Brown meat in large skillet; drain.

2. Stir in 2 and 3/4 cups water, salsa and chili powder. Bring to boil; stir in macaroni. Cover; simmer 10 minutes or until water is almost absorbed.

3. Add Velveeta; stir until melted. Top with crushed tortilla chips, chopped green onions and tomatoes, if desired.

Makes 6 servings.

Great Variation: Substitute Taco Bell Home Originals Taco Seasoning Mix for the chili powder.
